Paleo Blueberry Muffins


It's blueberry season up in here, y'all.

Ok, I still can't handle the word "y'all," but it seemed to fit there. However, I can handle blueberries.

MmmmMMM, can I handle blueberries!

This morning we drove out to a cute little organic farm with U-pick blueberries. My husband, wonderful being that he is, woke up early and got everything ready before the rest of us were up so that we could go before it got ungodly hot outside. Loooove him!

Little B (who is now THREE! What?!) was SO excited to go pick blueberries! (She eats a bowl of frozen blueberries pretty much every day.) It was quite lovely when we got there, and the bushes were loaded with ripe, juicy berries. B was an awesome little helper this year, and picked almost a pound all by herself! As opposed to last year, in which she ATE about two pounds and left 3 berries in her bucket for us to take home. Ain't she a cutie?!

My wonderful husband also wore Baby A (oh yeah, P.S., we had another baby girl! 7 hour home birth. Booyah. So much better than the 50 hour home-turned-hospital birth last time) in the Ergo the whole time, so A is now a seasoned blueberry picker at only 5 months old.

We came away from the morning with about 6 lbs of fresh, organic summer goodness. Which left me with only one choice.

*Blueberry muffins!!!*

My little sous chef helped me bake these, and they turned out to be quite delectable. I'd fallen off the paleo bandwagon a bit with pregnancy, having a baby, finishing our new house, moving, etc., but I am in a wedding next week and want to be a little less fat, so I was glad to have this yummy paleo option in the house ;-)

Paleo Blueberry Muffins

Yield: 12

Ingredients:

  • 1 cup peeled and diced zucchini

  • 1 cup coconut flour

  • 1/2 cup maple syrup

  • 1/3 cup coconut milk

  • 8 eggs

  • 1-2 Tbsp vanilla (depending on how much you love vanilla)

  • 1 tsp baking soda

  • 1/4 teaspoon sea salt

  • 1.5 cups fresh blueberries

Directions:

  • Preheat oven to 350 degrees.

  • Combine all ingredients in a food processor, high-speed blender, or large bowl to use with an immersion blender.

  • Blend well until batter is smooth.

  • Add blueberries and gently stir to incorporate.

  • Spoon batter into lined or greased muffin tins.

  • Bake for 25-27 minutes, turning halfway through.

  • Remove from oven, let cool, and enjoy!

I hope you all enjoy these! It's a super quick, easy, and delish recipe that just screams summer, and I am all about that. And, it's one that makes me not feel deprived while eating paleo, which is always awesome. Not to mention the fact that blueberries have the highest antioxidant load of any food out there!
