Who is Chef Karen?
I'm a wife, mommy, and nutrition enthusiast who just happens to be a certified
Natural Chef as well. I am dedicated to providing my family with the most nutrient-dense,
wholesome foods possible in order to maximize our health and quality of life, and I would
love to help you do the same.
Having been through extensive health problems during college and turning my health
around through a dietary overhaul, I know how daunting it can be. I have been handed
a huge list of foods I can no longer eat because of sensitivities and thought "Great...what
AM I supposed to eat?!" I have been there. I made it through. And I became a certified
Natural Chef specializing in Allergen-free and Therapeutic Cooking so I could help others
do the same.
I began my journey being constantly tired, having multiple migraines a week, insane blood sugar, battling weight fluctuations, hypothyroidism, anemia, and terrible acne. I was diagnosed with Insulin Resistance and Polycystic Ovarian Syndrome and told I may never have children. Thankfully, I decided to discover what was actually causing these problems in my body, rather than take a pill for them.
Today, I have more energy, have identified what foods trigger my migraines and balanced out the other issues that were causing them, I have cured my Insulin Resistance, my thyroid is working well, I am no longer anemic, and I actually have people tell me they wish they had skin like mine - a thing I never dreamed I would hear! And best of all, my ovarian cysts are almost (last time I checked -maybe totally now!) completely gone, and I am the mother of a beautiful, sweet, active, brilliant curly-headed 6-year-old girl who has changed my life more than I could have ever imagined, and a cute, snuggly, joyful, hilarious 4-year old girl who I just can't get enough of.
It is is always hard to change old habits, especially ones involving food! But believe me, it's so worth it. I am living proof. And I'm here to help you incorporate the cooking aspect of your new lifestyle, so you can stop coping and start living.
