Paleo Thumbprint Cookies

I tell you what, it has been really nice to be back to normal in the nausea department! Although I keep thinking I "just got over" my morning sickness, but I'm actually 6 months pregnant already. 6 months!!! I tell ya what, the second time goes so much more quickly! To be fair, though, I was vomitacious for a good 4 months, so it hasn't been that long since I started feeling better...

Anyway, it is really nice to be able to cook again now (and I'm sure my husband doesn't mind not having to work all day and prepare all the food anymore....). It has been so fun to get to bake with my little one again, too!

Bernadette loves helping me in the kitchen. Heck, she loves helping me anywhere! She just turned 2 a few months ago, and she already (and has for a while) helps me load and unload the washing machine and dryer, she unloads and sorts all the silverware, helps with pick-up, always wants to help me anytime I am in the kitchen...such a good little contributor to society! ;-)

I remember knowing a woman growing up whose mother was a chef, but this woman never learned how to cook! Apparently that happens sometimes - the chef parent is too perfectionist and never wants the kids in the kitchen messing things up. So, I try very hard to always include Bernadette - yes, it takes me 3 times as long to make anything, there are many more messes, and sometimes random things get dumped in the bowl - but it's ok! And this time, Bernadette's lack of listening ability actually made a cookie even better than the one I was planning!

I had the vanilla out by the bowl of dough, and asked her not to pour it in yet...2 seconds later, I turn around and she is dumping about a gallon into the bowl. Oh, geez. Good thing you can never have too much vanilla! (although I did attempt to dump some of it out...haha).

The cookies came out so well, though! My husband said he liked them better than my normal cookies, so...guess the apprentice has already surpassed the master ;-)

And, you can fill them with whatever you want. I really wanted jelly thumbprint cookies, and Bernadette said she wanted chocolate chip. So, I let her press her cute little thumb into the cookies, then we filled some with jelly, and some with chocolate chips. Everybody's happy!

Paleo Thumbprint Cookies

Ingredients:

  • 2 cups pecan (or almond) flour

  • 1/2 cup coconut flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon sea salt

  • 1/2 cup coconut sugar

  • 2 squirts liquid stevia

  • 3 Tbsp coconut oil

  • 2 eggs

  • 3 Tbsp vanilla extract

  • Jelly or chocolate chips for filling

Directions:

  1. Preheat oven to 350 degrees.

  2. In a large bowl, mix together dry ingredients.

  3. Add stevia, coconut oil, eggs, and vanilla extract. Stir until combined

  4. Dough should be moist/crumbly, so it sticks together if you squeeze it gently in your hands. If it is too dry, add a bit of coconut milk. Too wet, add some extra coconut flour, a teaspoon at a time.

  5. Using your hands, roll dough into 1-inch balls and place on greased or parchment-lined baking sheets.

  6. Press your thumb gently into the center of each cookie to flatten it out.

  7. Fill hole with chocolate chips or jelly.

  8. Bake for about 10 minutes.

  9. Remove from oven and allow to cool for 5 minutes before removing from baking sheets. Enjoy!

These cookies were so yum! And you can go crazy with the fillings. What type of fillings would you like to try?
