The Comeback Kid (plus Paleo Peanut Butter Chocolate Cupcakes!)

Oh come on, I know you've just been dying for more health information and delicious recipes that won't make you die! ;-)
I know it's been almost literally forever since I last posted, and I'm sorry about that. But as you can see, I've been hard at work re-designing my website! I have officially decided Wix > Wordpress. Unless you are super code-savvy, maybe, which I am most certainly not. I am so much happier with this design - I hope you like it too!
I've also been busy pursuing other business endeavors, playing with my crazy-awesome toddler, house-hunting 24/7, going on adventures with my husband, trying not to throw up for the past 4 months straight...ya know. Life.
But, now with my new website up, I am excited to get back to blogging! I've got lots of recipes coming your way.
To celebrate this momentous occasion, I am going to share with you one of my new absolute favorite recipes: paleo chocolate peanut butter cupcakes. These things are crazy good, and you seriously would never be able to tell they are paleo!
That's one of the reasons I love this recipe so much (besides the fact they are chocolate. And peanut butter. And cupcake. And amazing.) It's one of those recipes where you mix up all the ingredients, pop it in the oven, and you think "How the heck did all those ingredients turn into these amazing, puffy, moist, perfect cupcakes??" It's seriously like magic, yous guys.
And, while I call them "cupcakes," they are so full of healthy goodness that I actually wouldn't feel too terrible if I had to substitute them for a meal at some point. Not that I've ever done that in real life......
But I love them. For realz.
Chocolate Peanut Butter Cupcakes (Grain-free, dairy-free, refined sugar-free)
Ingredients:
1/2 cup coconut oil (or grass-fed butter)
1/4 cup maple syrup
1/4 cup coconut milk
2 dropperfuls of liquid stevia
1/2 cup cocoa powder
3/4 cup peanut butter or almond butter
4 eggs
1/2 teaspoon baking soda
3/4 cup chocolate chips (optional, but obviously recommended. I use Enjoy Life, as they are dairy and soy-free)
Directions:
Preheat oven to 350.
Over low heat, melt together coconut oil (or butter) and syrup.
Remove from heat and add stevia.
Whisk in cocoa powder and peanut butter until smooth.
Add eggs and baking soda; mix well.
Gently stir in chocolate chips.
Pour into lined or greased muffin tin (I love using stoneware muffin pans).
Bake for 18-22 minutes until done (take them out when they still seem a tad under-done, as they tend to dry out a bit as they cool).
Yields 11-12 muffins.
